Another year has passed
The seconds are ticking by
Time goes by so fast
Lord, teach me to number my days
Keeping to Your perfect way

My life is but a flower
It blooms and then it fades
I'm granted only so many hours

Why waste my life on the meaningless and vain?

"We love this recipe on a summer's day, but it works at any time of year."

Ingredients

8 slices bacon

24 baby red potatoes

2 tablespoons olive oil, or as needed



cracked black pepper to taste

1/3 cup Caesar salad dressing

4 green onions, diced

Directions

Preheat oven to 400 degrees F (200 degrees C).

Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels and crumble.

Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until slightly tender, about 8 minutes. Drain and transfer potatoes to a baking dish. Drizzle olive oil over potatoes and season with black pepper.

Bake in the preheated oven until tender, about 10 minutes.

Mix potatoes, bacon bits, Caesar salad dressing, and green onions together in a bowl.…

Meet your new go-to enchilada recipe! It’s an easy, cheesy way to turn a pound of ground beef into a weeknight dinner that’ll feed the whole family.



Ingredients

lb lean (at least 80%) ground beef

2

cans (10 oz each) Old El Paso™ enchilada sauce

1

can (4.5 oz) Old El Paso™ chopped green chiles

1

package (8.2 oz) Old El Paso™ flour tortillas for soft tacos & fajitas (6 inch)

cups shredded Cheddar cheese (6 oz)

Make it FRESH toppings, as desired (see below)

Heat oven to 375°F. Spray 13x9-inch (3-quart) baking dish or pan with cooking spray.

In 10-inch nonstick skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. Stir in 1/2 cup of the enchilada sauce and the chiles.

The best chicken-fried steak you’ll ever have

Yield: 2

Ingredients

3/4 pound round steak, cut into 2 pieces

1/2 teaspoon salt

2 eggs, well beaten

1/2 cup flour

1 teaspoon black pepper

1/2 sleeve Saltine crackers, crushed to make about 2 cups of crumbs

1/4 cup vegetable oil or bacon grease or a combination, for frying.

Instructions

Lay each piece of steak on a cutting board and gently pound them with the flat side of a meat mallet, working from the center towards the edges until about 1/3″ thick.

Go over each one again now with the pokey side of the mallet. Be gentle. You don’t want to tear the meat.

Sprinkle with the salt and set aside.

Mix the flour with the pepper and put it on a plate.

Beat the eggs well in a shallow bowl.

Crush the crackers and put them on a plate.

Now we bread. Dip each steak in this order: egg, flour, egg, crackers.

Set them aside while you heat your oil in a large skillet, over high heat.

I love me some good ol' southern comfort food.  If that's what you're looking for, well let me tell you, this Chicken Fried Chicken TAKES.THE.CAKE.  (Yes, I did the whole caps lock with periods for emphasis thing right there.  That's how strongly I feel about this dish.)

I'm sure you've heard of Chicken Fried Steak, which is pretty much the sister recipe to this one.  Same concept, just switch out the beef for chicken.  Trust me, we eat enough beef around here.  I prefer tender, juicy chicken breasts coated in a golden crispy crust covered in creamy peppery gravy...mmmm.  Throw a generous helping of silky smooth mashed potatoes on the side and you've got perfection on a plate.  Yum, yum and yum.

This one'll stick to your ribs and leave your tummy satisfied, I can guarantee that.  My husband took one bite and gave me the, "This is good."  On the first bite.  Now that's success and makes me one happy mama.
