Yummy Recipe Monday: Cookie Cake

Cookie Cake INGREDIENTS 1 c. butter, softened 3/4 c. packed brown sugar 3/4 c. granulated sugar 2 large eggs 2 tsp. pure vanilla extract 2 2/3 c. all-purpose flour 1 tsp. baking soda 1/2 tsp. kosher salt 2 c. chocolate chips (plus more for sprinkling) 1/4 c. rainbow sprinkles (plus more for sprinkling) 1 c. vanilla frosting DIRECTIONS Preheat oven to 350° and line a 9" round cake pan with parchment paper. Grease with cooking spray. In a large bowl using a hand mixer, beat butter and sugars until light and fluffy. Add eggs, one at a time, beating well between each addition. Stir in vanilla. Add flour, baking soda and salt and mix on low until just combined. Fold in chocolate chips and rainbow sprinkles. Press cookie dough into an even layer in the prepared pan. Top with more chocolate chips and sprinkles, if desired. Bake until the cookie is golden, about 25 minutes. Let cool in pan for 15 minutes then transfer cake to a cooli

Yummy Recipe Monday: Chicken Buffalo Wings

Chicken Buffalo Wings INGREDIENTS 2 lb. chicken wings 2 tbsp. extra-virgin olive oil kosher salt Freshly ground black pepper 1 tsp. garlic powder 1/4 c. hot sauce (such as Cholula) 4 tbsp. butter 2 tbsp. honey Ranch dressing for serving Carrot sticks, for serving celery sticks, for serving Preheat oven to 400° and place a wire rack over a baking sheet. In a large bowl, toss chicken wings with oil and season with garlic powder, salt and pepper. Transfer to prepared baking sheet. Bake until chicken is golden and skin is crispy, 50 to 60 minutes, flipping the wings halfway through. In a small saucepan, whisk together hot sauce and honey. Bring to simmer then stir in butter. Cook until melted and slightly reduced, about 2 minutes. Heat broiler on low. Transfer baked wings to a bowl and toss with sauce until completely coated. Return wings to rack and broil (watching carefully!) until sauce caramelizes, 3 minutes. Serve with ranch and vegetables.

Millionaire Shortbread YIELDS: 2 DOZEN PREP TIME: 0 HOURS 30 MINS TOTAL TIME: 1 HOUR 30 MINS INGREDIENTS SHORTBREAD LAYER 1 c. (2 sticks) butter, softened 1 c. granulated sugar 1 tsp. pure vanilla extract 2 1/4 c. all-purpose flour 1/2 tsp. kosher salt CARAMEL LAYER 2 (11-oz.) packages caramel squares 1/2 c. heavy cream CHOCOLATE LAYER 2 c. semisweet chocolate chips Flaky sea salt, for garnish DIRECTIONS Preheat oven to 300°. Line a 13"-x-9" pan with parchment paper and spray with cooking spray. Make shortbread layer: Cream softened butter with sugar until light and fluffy. Add flour and vanilla and mix until a bread crumb texture forms. Press mixture into a prepared pan and prick all over with a fork. Bake until lightly golden, 30 minutes. Let cool completely. Philly Cheese Steak Nachos YIELDS: 6 TOTAL TIME: 0 HOURS 30 MINS INGREDIENTS 2 tbsp. vegetable oil 1 large onion, thinly sliced 2 large bell peppers, thinly sliced kosher salt Freshly ground black pepper 1 tsp. Italian seasoning 1 lb. sirloin steak, thinly sliced 2 c. shredded provolone 1 c. shredded mozzarella 1 large bag tortilla chips DIRECTIONS Preheat oven to 375°. Line a large baking sheet with foil. Heat 1 tablespoon of oil in a large skillet over medium heat, then add onion and bell peppers. Season with salt and pepper and cook, stirring often, until the onions and peppers are tender, about 5 minutes.
