Note: Use the ripest tomatoes you can find. In the off-season, this generally means smaller plum, Roma, or cherry tomatoes.

1 1/2 pounds ripe tomatoes, cut into 1/4- to 1/2-inch dice (about 3 cups, see note above)

Kosher salt

1/2 large white onion, finely diced (about 3/4 cup)

1 to 2 serrano or jalapeño chilies, finely diced (seeds and membranes removed for a milder salsa)

1/2 cup finely chopped fresh cilantro leaves

1 tablespoon lime juice from 1 lime

Ingredients

1 1/2 cups half-and-half

8 eggs

2 tablespoons vanilla extract

1 tablespoon dark brown sugar

8 slices French bread



1/4 cup butter, or more as needed

3/4 cup brown sugar

1/2 cup maple syrup

3/4 cup chopped pecans

2 tablespoons confectioners sugar, or more to taste

Directions

Mix half-and-half, eggs, vanilla, and 1 tablespoon dark brown sugar together in a large shallow bowl; add French bread. Cover bowl with plastic wrap and refrigerate 8 hours to overnight.

Preheat oven to 350 degrees F (175 degrees C).

Place butter in a 9x13-inch casserole dish. Place casserole dish in the preheating oven to melt butter, about 5 minutes. Swirl butter over bottom of the dish.

Spread brown sugar, maple syrup, and pecans over the melted butter. Arrange soaked bread atop pecan mixture.

"Easy and so good for holidays, weddings, or whatever the occasion!"

Ingredients

1 (12 ounce) package vanilla wafers

2 (8 ounce) packages cream cheese

3/4 cup white sugar



2 eggs

1 teaspoon vanilla extract

1 (21 ounce) can cherry pie filling

Directions

Preheat oven to 350 degrees F (175 degrees C). Line miniature muffin tins (tassie pans) with miniature paper liners.

Crush the vanilla wafers and place 1/2 tablespoon of the crushed vanilla wafers into the paper lined miniature muffin tins.

Cream together with an electric mixer the cream cheese, sugar, eggs and vanilla. Fill each miniature muffin liner with this mixture, almost to the top.

Bake at 350 degrees F (175 degrees C) for 15 minutes. Cool and then top with a teaspoonful of cherry (or any other flavor) pie filling.
